Partea bun\u0103 este c\u0103 nu cere aten\u0163ie constant\u0103.<\/p>\n<p>Carnea poate fi de care dori\u0163i, at\u00eeta vreme c\u00eet \u00eei \u015fti\u0163i sau \u00eei pute\u0163i b\u0103nui timpii de g\u0103tire. Am f\u0103cut chestia asta cu piept de pui, am f\u0103cut cu tot felul de p\u0103r\u0163i ale porcului, am f\u0103cut chiar \u015fi cu carne tocat\u0103 \u00een combina\u0163ie porc-vit\u0103. A, \u015fi s\u0103 nu uit\u0103m c\u0103 \u015fi ficatul de pui merge bini\u015for. Nu am \u00eencercat <em>doar<\/em> cu vit\u0103.<\/p>\n<p>Bun, s\u0103 trecem la fapte!<\/p>\n<p style=\"text-align: center;\">~*~<\/p>\n<p>Pasul 1, cel pu\u0163in pentru mine, este s\u0103 toc toate chestiile pe care le voi folosi mai \u00eencolo. C\u00eend zic ulei, zic evident de \u0103la de m\u0103sline, nu de floare sau alte imita\u0163ii ieftine. Uleiul trebuie s\u0103 acopere fundul wokului, partea plat\u0103; nu trebuie s\u0103 b\u0103lteasc\u0103. Mai bine pune\u0163i prea pu\u0163in, dec\u00eet prea mult. Oricum, carnea de porc mai las\u0103 \u015fi ea gr\u0103sime la final.<\/p>\n<p>Se pune ceapa la c\u0103lit, cu timpii tipici &#8211; p\u00een\u0103 \u00eencepe s\u0103 bat\u0103 u\u015for \u00eenspre maro. Nu conteaz\u0103 foarte tare num\u0103rul exact de minute<sup><a href=\"#footnote_4_93\" id=\"identifier_4_93\" class=\"footnote-link footnote-identifier-link\" title=\"\u015ei da, scriu asta, pentru c\u0103 eu chiar num\u0103r minutele. Ur\u0103sc s\u0103 mi se spun\u0103 chestii vagi, gen &bdquo;a\u015ftep\u0163i p&icirc;n\u0103 arat\u0103 bine&rdquo;. Ori am o poz\u0103, ori am numere.\">[4]<\/a><\/sup>. Imediat punem \u015fi condimentele peste, \u015fi mic\u015for\u0103m focul.\u00a0Se poate acoperi cu curaj tot con\u0163inutul din wok cu condimente, s\u0103 p\u0103trund\u0103 bine \u00een carne.<\/p>\n<p>\u0162in s\u0103 fac o remarc\u0103 despre partea asta:<\/p>\n<p>Nu arunc\u0103m \u00een wok tot ce avem pe raft, pe ideea c\u0103 &#8222;s\u0103 aib\u0103 gust bun&#8221;. M\u00eencarea are oricum o savoare a ei proprie, pe care condimentele doar o reliefeaz\u0103. Exist\u0103 un punct \u00een care am ob\u0163inut o combina\u0163ie mi\u015fto de arome care merg unele cu altele. Acolo ne oprim, altfel iese h\u0103rm\u0103laie.<\/p>\n<p>Spre exemplu, tura asta am pus un strat sub\u0163ire de tot de piper negru, iar peste am ad\u0103ugat usturoi granulat pu\u0163in mai serios. Apoi, singura chestie cu care am fost generos a fost baharatul (a se vedea poza). Nu mult, doar c\u00eet s\u0103 fi petrecut ceva timp \u00eempreun\u0103. Putem turna de acum ro\u015fiile.<\/p>\n<p>Scopul ro\u015fiilor este doar de-a da o u\u015foar\u0103 arom\u0103 mixului; mai ales dac\u0103-i past\u0103 de tomate, nici nu le ve\u0163i sim\u0163i la final. Pe l\u00eeng\u0103 asta, un rol mai important este acela c\u0103 fac \u00eentregul amestec s\u0103 fiarb\u0103, mai degrab\u0103 dec\u00eet s\u0103 se pr\u0103jeasc\u0103<sup><a href=\"#footnote_5_93\" id=\"identifier_5_93\" class=\"footnote-link footnote-identifier-link\" title=\"&Icirc;n primul r&icirc;nd, e mai s\u0103n\u0103tos, &Icirc;n al doilea r&icirc;nd, &icirc;ng\u0103duie buc\u0103tarului s\u0103 nu stea s\u0103 tot amestece &icirc;n wok. Verific\u0103m c\u0103 avem destul lichid, punem o alarm\u0103 s\u0103 sune peste 15 minute, \u015fi putem merge \u00een treaba noastr\u0103.<\/p>\n<p>A, focul nu se las\u0103 mare. Mediu \u00eenspre mic, mai degrab\u0103.<\/p>\n<p style=\"text-align: center;\">~*~<\/p>\n<p>\u00cen principiu, dup\u0103 15 minute ar trebui oricum ca m\u00eencarea \u00eens\u0103\u015fi s\u0103 ne &#8222;cheme&#8221; la ea, fiindc\u0103 emite un miros excelent. \u00cen special dac-a\u0163i folosit ingrediente mi\u015fto, gen Ras el Hanout sau alte combina\u0163ii faine.<\/p>\n<p>Regule de baz\u0103 este c\u0103 trecem la pasul urm\u0103tor dac\u0103 carnea e aproape f\u0103cut\u0103, dar nu complet. Dac\u0103 \u00eencepe s\u0103 prind\u0103 gust, dar \u00eenc\u0103 e &#8222;tare&#8221;. Pe scurt, c\u00eend putem estima c\u0103 mai trebuie s\u0103 stea 10-15 minute.<\/p>\n<p>Legumele pot s\u0103 fie puse \u015fi direct din congelator, \u00eens\u0103 v\u0103 face\u0163i singuri de munc\u0103, fiindc\u0103 trebuie &#8222;sparte&#8221; blocurile de ghea\u0163\u0103, pentru a se g\u0103ti uniform. Ideea este doar s\u0103 avem ni\u015fte ingrediente mai altfel dec\u00eet ce obi\u015fnuim s\u0103 consum\u0103m \u00een restul timpului. Prin magazine le g\u0103si\u0163i sub diverse denumiri &#8211; Thai mix, Chinese mix, oriental mix \u015famd .. p\u00een\u0103 la urm\u0103, conteaz\u0103 dac\u0103-i bun\u0103 la gust la final.<\/p>\n<p>\u0102sta-i momentul \u00een care pune\u0163i absolut tot ce a\u0163i mai vrut s\u0103 pune\u0163i. Legumele asiatice. Ciupercile. M\u0103slinele. Extra legume de orice fel. Usturoiul.<\/p>\n<p>A, \u015fi se pudreaz\u0103 din nou cu condimente, dac\u0103 considera\u0163i necear. Din experien\u0163a mea, dureaz\u0103 10-15 minute s\u0103 se g\u0103teasc\u0103 \u015fi s\u0103 se p\u0103trund\u0103 cu arom\u0103.
